This fried rice recipe is so quick and easy, plus it’s almost as good as takeout. I like to use the steamer bags of vegetables and the microwave packages of rice. You want either the microwave rice or leftover rice so it’s got the right feel to it. It should be a little harder than your typical rice, kind of like sticky rice or sushi rice.
4 Slices bacon
2 cloves garlic
1 Tablespoon soy sauce
1 package frozen mixed veggies
3 cups rice
Soy sauce to taste
1. Cook bacon and set aside.
2. Mince garlic and mix with eggs and 1 Tablespoon of soy sauce. Fry egg in the rendered bacon fat, chop it up a bit as you go. Remove from fat and set aside.
3. Throw vegetables in and coat evenly with bacon fat. If you are using raw vegetables, cook 4 minutes. If steamed, you can toss them quickly with the fat and move on.
4. Throw in cooked rice, reserved bacon and eggs and soy sauce to your taste. Toss well and serve.
