These are great! I cut mine a little over-size so they stay nice and tender during cooking. Keep in mind that they shrink up. I’d recommend doing this in batches so the batter doesn’t get soggy before you can eat them. I had a basic garlic aioli dipping sauce, but you can use any sauce you like.
1 cup flour
1 teaspoon salt
1/4 cup soda water
1 lb squid rings
2 cups vegetable oil
1. Mix flour and salt. Add eggs and soda water. Whisk until smooth.
2. Heat oil to 375 degrees F.
3. Dip rings in batter and fry 1-2 minutes.
