1 lb hot Italian sausage, sliced with casings removed
2 cups sliced carrots
1 medium onion, chopped
1/2 cup celery, sliced
1 cup fresh mushrooms, sliced
2 TBsp butter
1/2 cup chopped parsley
3 cups chicken broth
1 tsp dried sage
salt and pepper
1 cup freshly grated Parmesan ( I forgot to put the cheese on and it was still really good)
1. Saute sausage until browned and set aside. Drain off grease.
2. Add carrots, celery, onion, mushrooms and butter and saute for 5-10 minutes over medium-low heat.
3. Add sausage, parsley, chicken broth, sage, salt and pepper. Simmer 30-40 minutes.
4. Sprinkle with cheese and serve.
