4 Cornish Game Hens, thawed
1 package chicken stuffing mix
1/2 cup celery, sliced
1/3 cup almonds, slivered
1/2 cup dried cranberries
1 can cranberry sauce
2 Tablespoons olive oil
1. Mix stuffing mix, celery, almonds, cranberries and olive oil in a bowl.
2. Preheat oven to 425 degrees. Stuff hens with stuffing mixture and place on a rack in a roasting pan. Rub skins with olive oil and sprinkle with salt and pepper.
3. Roast hens 35-45 minutes or until 180 degrees F is reached.
4. Serve with cranberry sauce, melted if you like, but I like the cold contrast. Drizzle if you melt it.
